This Greek Pasta Salad is super healthy and light, and fits perfectly in the 21 Day Fix! I use it as a side dish, but you could also add grilled or roasted chicken to it for a very simple meal! Serve it chilled.
Earlier this year, I let you all know my resolutions. I'm glad that I'm doing great, although we're only 6 weeks in. My resolutions were to work out 3 times a week, eat small meals frequently, and be in bed with my phone put away by 10:45pm each night. Honestly, the hardest thing for me has been to put my phone down at night! I know I'm not alone here, since we're all addicted to our phones, right? And once I start a good book, I have to tear myself away from it!
Last week, I started the 21 Day Fix challenge. I wanted to re-set my cravings clock and eating portions. I have to do this once a year to maintain a good weight. I find that as the year creeps on, I eat bigger and bigger portions, and more and more unhealthy food. This program was attractive to me because you make all your own food, with the exception of a protein shake each day. I love shakes, so no problem. Also, each day you need to get in 30 minutes of exercise, Again, find by me! The best part is the support group. I have a group of friends who are also doing this challenge and we have a support group on Facebook. It has been SO helpful to me! I really can't stick to anything if I'm doing it alone.
I've been looking for healthier recipes that fit into the 21 Day Fix standards. One thing that I love is that carbs are TOTALLY allowed, but they need to be quality, like the whole wheat pasta I use in this recipe. You have to fit veggies in whenever you can, to meet your daily goals. I packed this pasta salad recipe with tomatoes, brocolli, cauliflower, red onions and olives. I used low fat feta cheese, and a super easy and tangy greek vinaigrette! Most pasta salad is LOADED with sugar or mayonnaise. This pasta salad tastes GREAT and packs in a ton of fresh ingredients.

LOL! I hear you. It's a perpetual restart for most of us, I think! I love making a big batch of this and just keeping it in the fridge for an easy lunch or dinner side dish.

Hi Candace! I had the serving calculated at 1.5 cups for those container values. I also like to add in a container of shredded chicken when I have it, great for lunch!
