Homemade Greek Vinaigrette – Easy Salad Dressing

We know that Mediterranean food is healthy food, so it’s a good idea to have this easy vinaigrette recipe in your arsenal. The best part? This Greek dressing recipe is super easy to make and adds big Greek flavors to your favorite salads and veggies!

If you’re wondering what Greek salad dressing tastes like, it’s a big blast of flavor! The red wine vinegar and lemon bring an acidic balance to the luscious olive oil, and the herbs pack a punch!
I modeled this easy Greek dressing after the one at Cava grill. It’s an herby dressing that compliments any green salad or veggie beautifully, and it just has a handful of simple ingredients.

Greek Vinaigrette Substitutions:
As always, I have some suggestions for ingredient substitutions. Here are a few:
- Red wine vinegar is a key ingredient, but of course you can substitute another vinegar of your choice or fresh lemon juice.
- You can absolutely use fresh herbs instead of dried herbs. Remember, the rule of thumb is a 3:1 ratio of fresh to dry.
- Extra-virgin olive oil is another important component, but in a pinch any neutral tasting oil will do, like canola oil or avocado oil.
- Add a touch of honey if desired to balance out the acidity.
Greek Garlic Dressing: Add 1-2 whole fresh garlic cloves and allow them to rest in the dressing for at least 30 minutes or overnight. Remember to remove the garlic cloves before serving!
Creamy Greek Vinaigrette: To make a creamy Greek Vinaigrette, add 1/4 cup plain Greek yogurt and and shake vigorously with the rest of the ingredients. I promise it will still have that Greek Vinaigrette taste with the creamy yogurt.
Dill Greek Dressing: Add 1/2 tablespoon fresh dill
Spicy Greek Dressing: Add 1/2 of a fresh jalapeno, diced!

Serving Suggestions for Traditional Greek Salad Dressing:
Have leftover dressing? There are so many ways to use it! Here are a few suggestions:
- On Greek salad with fresh greens, tomatoes, red onion, briny kalamata olives and feta cheese and mini pitas on the side!
- Drizzled over the top of brown rice or rice pilaf.
- In pasta salads.
- On cabbage slaw.
- Drizzled on a grain bowl or roasted brussels sprouts.
- To add flavor to your favorite veggies. I like broccoli, cucumbers, asparagus or potatoes.
- Drizzled over the top of red pepper hummus for extra flavor. Serve with crunchy pita chips!
- As a marinade for chicken or shrimp.

Storing Greek Dressing
This Greek dressing recipe is best stored on the counter at room temperature in an airtight container! I like to use a mason jar so I can just screw the lid on and then shake it again whenever I’m about to use it. You can store it in the refrigerator if preferred.

Homemade Greek Vinaigrette
Ingredients
- ½ cup olive oil
- ⅓ cup red wine vinegar
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon minced garlic
- ½ teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Combine ingredients into a mason jar. Cover and shake well to combine ingredients.
