Bacon Wrapped Green Beans are a simple, elegant side dish recipe! Fresh green beans are paired with crispy bacon and a buttery brown sugar and soy glaze.

Last weekend, I decided to do some experimenting with green beans. I was perusing my Mom’s church cookbook from my childhood, and noticed a recipe for bacon wrapped green beans that piqued my interest. The idea of little bundles of green beans wrapped with bacon and a glaze sounded divine to me. I’ll admit it’s a little risky trying recipes out of a random cookbook, but this fancy green bean recipe just seemed like it would work!

My favorite type of recipe is just like this one, the kind that turns regular green beans into something super special! For this green bean recipe, I wrapped trimmed, fresh green beans in a half slice of bacon, and roasted these bundles in the oven.

Then, I made an easy sauce with butter, a little bit of brown sugar and seasonings and doused the roasted green bean bundles with it!

I think this is a super beautiful side dish or appetizer recipe! The bright green color of the green beans is a gorgeous contrast to the dark color of the bacon, and the flavors are the perfect combination of sweet, salty and rich.

Recipe Ingredient Substitutions and Additions

There are plenty of ways to modify this recipe! Here are a few ideas:

  • For a spicy taste, try adding a pinch of ground cayenne pepper or hot sauce to the brown sugar sauce!
  • I do not recommend using pre-cooked bacon if you want to roast the green beans. However, you could choose to blanch the green beans by boiling them for 2-3 minutes, then transferring them to a cold-water ice bath. Then wrap them in the pre-cooked bacon and dip in the sauce. As an added bonus, this cooking process really helps the green beans retain their green hue! Using pre-cooked bacon is also a way to substitute canned green beans in this recipe. If you do use canned green beans, I recommend choosing French green beans, since they are longer!
  • You can absolutely use thick-cut bacon but may need to use a few more minutes of roasting in the oven!
  • Feel free to line your baking sheet with parchment paper or aluminum foil for easy cleanup.

How to Assemble Green Bean Bundles

First, clean the stems off your green beans. Gather 5-6 green beans in a bundle and wrap with half of a strip of bacon. Secure with a toothpick and place on a lightly greased pan.

Next, make the glaze! Butter, brown sugar and garlic powder are placed in a microwave-safe bowl. Melt then stir to combine. Pour the glaze over the green bean bundles, then roast in the oven.

In about 25 minutes, you have an absolutely delicious green bean dish that makes an inexpensive vegetable the star of dinner!

Storing Leftovers

Store leftover green bean bundles in an airtight container in the refrigerator for 2-3 days.

I think that these reheat best in the oven or the air fryer!
