Oh, how I love this Pineapple Coleslaw recipe! There’s a bit of sweetness and spice in every bite. It’s great for summer potlucks.

This year, I’ve been approaching how I create recipes for Blackberry Babe a bit differently. How so? Well, I’m going back to my roots and just making what sounds good to me. And this Jalapeno Pineapple Slaw recipe was something that just plain sounded good to me! 

I originally paired this pineapple slaw with my Grilled Huli Huli Chicken Thighs and this Hawaiian Mac Salad. The tropical flavors of the slaw just work! 

But, I think it’s a good all-purpose side dish that you can bring to a summer barbecue or potluck, and everyone will love it because it’s just  *little* bit special. 

To keep this recipe easy, you can buy pre-shredded coleslaw mix, or shred your own cabbage! I won’t judge either way.

Recipe Substitutions and Additions

If you’re new here, I want you to know that I think the best recipes are the ones that use what you already have on hand! So, I do my best to give ingredient substitution ideas in each post.

Here’s a few ways to switch up this pineapple slaw: 

  • I prefer using fresh pineapple in this recipe, but there’s nothing wrong with using canned pineapple. Pineapple tidbits are actually the perfect size. Just make sure to drain it before adding it to the coleslaw mix and remove extra moisture by patting it dry with paper towels.
  • Instead of apple cider vinegar, try lime juice or white vinegar.
  • Add extra vegetables to the mix! A handful of shredded carrots, shredded broccoli stem or chopped raw brussels sprouts for extra crunch and color. 
  • Add nuts with sliced, toasted almonds. 
  • Add diced green onions 
  • Substitute plain Greek yogurt for the mayo.

Serving Suggestions

The fresh, tropical flavor of this pineapple coleslaw makes it perfect side dish for summer cookouts! Pair it with your favorite burgers, walking chili cheese dogs, grilled steaks, grilled chicken or pulled pork sandwiches

Storing Leftover Pineapple Slaw

Transfer leftover slaw into an airtight container and store in the refrigerator for up to 3 days.

You can make this recipe a day ahead, just make sure to stir well before serving!

Jalapeno Pineapple Coleslaw

Oh, how I love this Pineapple Coleslaw recipe! There's a bit of sweetness and spice in every bite. It's great for potlucks.
Feel free to shred your own cabbage! You will need about 3.5 or 4 cups total.
Makes about 4 cups of coleslaw.

Ingredients
 

For the dressing:

  • 3 tablespoons apple cider vinegar, or lime juice
  • 3 tablespoons mayonnaise
  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon celery seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the slaw:

  • 10 ounces cabbage, shredded
  • 1/2 cup pineapple, fresh or canned, cut into small pieces
  • 1/3 cup cilantro, chopped
  • 1/4 cup onion, sliced thin
  • 1 jalapeno, small, seeded, diced

Equipment

Instructions
 

  • To a large bowl, add the dressing ingredients and stir vigorously with a whisk.
  • To the dressing, add the rest of the ingredients. Add shredded cabbage, fresh pineapple, cilantro and diced jalapeno. Toss with tongs to combine.
  • Cover, and refrigerate for 1 hour before serving.

One serving is 1/2 cup.
