Oh, how I love this Pineapple Coleslaw recipe! There's a bit of sweetness and spice in every bite. It's great for potlucks.
Feel free to shred your own cabbage! You will need about 3.5 or 4 cups total.
Makes about 4 cups of coleslaw.

For the dressing:

For the slaw:

Instructions
To a large bowl, add the dressing ingredients and stir vigorously with a whisk.
To the dressing, add the rest of the ingredients. Add shredded cabbage, fresh pineapple, cilantro and diced jalapeno. Toss with tongs to combine.
Cover, and refrigerate for 1 hour before serving.
Notes
One serving is 1/2 cup.
