I normally don’t do a roast turkey, opting instead to cook the turkey outside. I either do smoked turkey or make my spicy Cajun turkey in the deep fryer!

Most of you know that I’m from the Midwest, so I was raised on my sweet corn casserole. This classic side dish recipe was inspired by the awesome cheesy corn at Jack Stack BBQ, although I did cut back a little bit on the butter and the cheese!

Cream Cheese Casserole Recipe Additions:

This is a basic recipe, so feel free to make additions to this great side dish and make it your own! Here are a few suggestions:

  • Mix in 2-3 slices of cooked, crumbled bacon.
  • Top with green onions or cilantro.
  • Top with parmesan cheese or cotija cheese.

Recipe Variations and Substitutions:

This recipe uses simple ingredients, and there are many variations for the original recipe. Here are a few suggestions, below! 

  • Substitute cheddar cheese for the Colby jack 
  • Heavy cream works as a 1:1 substitution for the cream cheese. I have not tried sour cream.

Crockpot: Yes, you can make this in the slow cooker! Throw all of the ingredients in the crockpot and heat it on low for 3-4 hours until bubbly.

Cream Corn Casserole:  Yes, you can substitute creamed corn for up to half the regular corn in this recipe. It will be a bit sweeter, but it is delicious!

Cream Cheese Corn Casserole

Yield: Serves 9

Cook Time: 1 hour
Total Time: 1 hour 5 minutes

You'll be asked for this cream cheese corn casserole recipe every time you bring it: sweet corn with cream cheese, chile peppers and spices make a super side dish!

Ingredients

  • 8 ounces cream cheese
  • 4 ounces canned green chiles, diced
  • 3 15-ounce cans of whole kernel corn, drained
  • 1.25 cups, shredded Colby jack cheese, divided
  • ½ small yellow onion, diced into very small pieces

Added seasonings:

  • 1 teaspoon white sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon Old Bay or Cajun seasoning
  • ¼ tsp salt
  • ⅛ tsp pepper

Optional toppings:

  • fresh herbs (I like green onions)

Instructions

  1. Preheat oven to 300 degrees Fahrenheit. Prepare a 9x9'' baking dish by spraying it with cooking spray.
  2. In a large microwave safe bowl, add the cream cheese and green chiles. Cook in microwave for 1-2 minutes, until cream cheese is melted. Stir and smooth the softened cream cheese.
  3. To the cream cheese, add corn, ¾ cup of the cheese, diced onion, and spices. Gently fold the mixture to combine.
  4. Spray a 9x9'' baking dish with cooking oil, then add corn and cream cheese mixture to pan. Sprinkle with the remaining ½ cup to cheese.
  5. Bake in preheated oven for one hour, or until the cheese is completely melted and starting to brown on top. If the cheese is not browning, turn your oven to low broil for 1-2 minutes to speed the process!

Notes

For a sweeter casserole, substitute creamed corn for up to half of the corn called for.
