Easy Apple Cider Vinaigrette Dressing

I am all about making my own salad dressings! Honestly, they’re just so easy to make. The recipe that I’m sharing below is my basic apple cider vinaigrette recipe, the staple dressing we use several nights a week.
I switch out a different vinegar depending on the time of the year. For Fall? I make my delicious dressing with raw apple cider vinegar, turning it into an Apple Cider Vinaigrette dressing!

Apple Cider Vinegar has a great, tangy flavor, and also offers health benefits! Many people use it as an aid for weight loss, to treat heartburn or aid in healthy digestion. Even without the health benefits of apple cider vinegar, I would use it for it’s delicious flavor. I prefer to use good quality, raw organic apple cider vinegar for the full benefits of the fermentation process.
This easy homemade vinaigrette pairs so well with fall flavors, like a kale salad with fresh apples, walnuts and pecans and fresh herbs like thyme and sage.

Apple Cider Vinegar Dressing Substitutions
This easy apple cider vinegar salad dressing recipe has a ton of substitutions that will work well! Here are a few suggestions:
- Substitute maple syrup for honey for a little extra fall flavor and touch of sweetness
- Substitute any neutral tasting oil for the avocado oil
- Substitute any vinegar or fresh lemon juice for the apple cider vinegar
- Substitute 1/2 teaspoon of garlic powder for the fresh garlic
- Add chopped fresh herbs like thyme or sage

Storing Leftover Apple Cider Vinaigrette
Store leftover dressing at room temperature in an airtight container for 1-2 days, or in the refrigerator for up to 3 weeks. You will need to allow the vinaigrette to come closer to room temperature before serving.

Easy Apple Cider Vinaigrette
Ingredients
- 1/2 cup avocado oil, or extra virgin olive oil
- 1/3 cup apple cider vinegar
- 2 tablespoons honey, or maple syrup
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 3/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 shallot, finely minced (optional)
Instructions
- In a small bowl or mason jar, add all ingredients.
- Whisk vigorously, or cover with a lid and shake to combine.
- Allow ingredients to rest for about 10 minutes before serving, whisking gently again before pouring over salad.
