Super easy, gooey brownie cookies with bits of crunchy, peanut butter Butterfinger candy! No one will guess that you used a brownie mix for these cookies!
I don’t consider myself to be a particularly lucky person, but after this week, that opinion just might change. First, I was notified that I won free bacon for a year. FREE BACON! For a year! For real! I can’t get over it. I learned about my glorious bacon winnings when I was at a conference in Iowa. I was enjoying dinner with a few of my customers, and there was a poker tournament for our group after dinner. I begrudgingly went, because I’m truly terrible at card games. I was fully expecting to embarrass myself, but guess what happened? I WON MONEY! Not a lot, but for a girl whose cards strategy mostly consists of pretending to know what’s going on, I was thrilled.
To add to all my random luck, I’m officially done with my long work trips for the year! It feels SO good to be home and living a more settled life. Halloween is two weeks away, so I’m scrambling to get our plans in place to make it special for Eli. He’s in love with Thomas the Train, so we bought a train conductor costume for him, and we’ll be decking out his little blue wagon to look like Thomas!
Our neighborhood has a Trunk or Treat event the evening of Halloween, and I’ll be bringing these super fun cookies for all of the parents! It’s tradition to bring treats for the kiddos (and adults, who are we kidding), and also something for the parents to enjoy. So, I headed to WalMart to grab some Fun-Size Butterfinger candy, brownie mix and a few staples to make this recipe.
These brownie cookies are decadent and gooey in the middle, with crispy, crackly outsides. Butterfinger is chopped up and added to the batter, which gives the cookies a hint of peanut butter taste, and random crunchy bits of candy in each bite. They are to die for, and nobody will know that the main ingredient is brownie mix! You can also make these after Halloween with your leftover candy! Brilliant!
