Spicy Molasses, Beer and Chipotle Baked Beans (Smoker or Oven)
These Spicy Baked Beans have chipotle peppers, molasses and beer for rich, complex flavor! Can be cooked in the oven or in the smoker.
This past weekend was my birthday, but I also got a little cooking in on Saturday. You know that I love cooking if I gladly do it on my birthday! I whipped up some sides for my husband’s fantasy football draft party, including this incredible chipotle baked beans.

These spicy baked beans are absolutely delicious. In this recipe, I use canned chipotle peppers, molasses, beer, garlic and plenty of spices for a taste that’s sweet and savory. I didn’t have my smoker going, so I cooked them in the oven, but they can absolutely be made on the smoker or grill!

For this recipe, I used canned chipotle chiles in adobo sauce. This can typically be found in the Hispanic section. Please be aware that the adobo sauce in this can is quite spicy! If you want to keep the heat level of your baked beans mild, make sure to rinse the chipotle pepper before you chop it.
On the other hand, if you like heat, add a few teaspoons of the adobo sauce to the baked bean sauce!

Recipe Substitutions and Additions
To make these baked beans recipe vegetarian, omit the bacon.
Instead of the beans called for in the recipe below, you’re welcome to use navy beans, cannellini beans, or even substitute some of all of the cans for cans of pork and beans.
To add extra spice, add 1-2 teaspoons of hot sauce. I like Tabasco! You can also add a hefty pinch of cayenne pepper.
Make honey chipotle baked beans by substituting honey for the molasses.
Add extra aromatics when you sauté the onions by adding 1/2 of a sliced shallot and 1-2 minced garlic cloves.

Serving Suggestions for Chipotle Baked Beans
I think these baked beans are the perfect side dish for any barbecue! Serve it alongside smoked corn, grilled chicken thighs.
For dessert, make grilled peaches, brownie mix cookies or snickerdoodle blondies.
Saving Leftover Baked Beans
If you have leftovers, save them in an airtight container in the refrigerator for up to a week.

Spicy Chipotle Baked Beans
Ingredients
- 3 slices of bacon, smoked flavor, raw, diced
- 3/4 cup yellow onion, chopped
- 15 ounces Great Northern beans, drained
- 15 ounce Pinto beans, drained
- 15 ounce Light Red Kidney beans, drained
For the sauce:
- 1 cup barbecue sauce, use your favorite!
- 1 cup beer
- 2 tablespoons light molasses, or honey/brown sugar
- 2 tablespoons Worcestershire sauce, or soy sauce
- 1.5 tablespoons Dijon mustard
- 1 tablespoon Chipotle Peppers in Adobo Sauce, minced
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a Dutch oven or large skillet, add bacon and cook until crisp, around 5 minutes.
- Add onion and allow to sweat with bacon for 2-3 minutes.
- Add sauce ingredients and bring to a simmer.
- Add beans, stir to combine.
- If using Dutch oven, transfer directly into oven. If using skillet, carefully transfer beans into 13×9'' casserole baking dish.
- Bake uncovered until liquid bubbles and thickens, about 1 hour.
- Cool for several minutes before serving.

Hi Lucina! This is meant to serve 6-8. If you have a lot of sides, I think it could stretch to serve 10 people.
