This warm, cheesy roast beef slider recipe makes perfect use of deli roast beef or leftover sliced beef! It’s wonderful for dinner or a game day appetizer.

I love using Hawaiian rolls for sliders! These roast beef sliders are the result of an abundance of deli roast beef that we had on hand, and I’m so happy with how they turned out.

In this easy recipe, I layered the beef, cheese, and pre-made French fried onions to keep it easy and add flavor. Baked sliders are usually baked with a seasoned butter. I used an au jus beef gravy mix to add flavor and make these sliders feel a bit like a French dip. So good!

For the beef, the easiest option is to visit your deli counter and ask them to slice a pound of roast beef for you. If you’d like to make your own beef to use in this recipe, I recommend my Roasted Sirloin Tip Roast (sliced thin), or my Red Wine Pot Roast (shredded).

Recipe Substitutions and Additions

There are plenty of options for customizing these easy beef sliders. Here are a few suggestions:

  • Use any kind of slider rolls! I prefer Hawaiian rolls, but French or Brioche are also excellent options. You can of course make this recipe into full-size sandwiches by using full-size buns or deli rolls. Simply follow the same directions, making sure to divide the ingredients equally among your buns. 
  • You can use fresh sliced roast beef from the deli, packaged deli meat from the refrigerator case, or leftover sliced beef or even pot roast! 
  • If you have a family member that doesn’t love beef, try substituting with sliced turkey or chicken. It will be delicious!
  • Different cheeses work well! Try cheddar cheese, provolone cheese, smoked gouda or Colby jack. 
  • Add a smear of horseradish or creamy horseradish mayo to the slider buns if you like horseradish! 

Serving Suggestions 

I think these French dip sliders are wonderful as an appetizer for a game night party or football watch party! Serve them alongside my football charcuterie board, crack corn dip or a veggie tray.

If you’re serving them for dinner, I recommend something light on the side like this a crisp Italian salad or this Greek salad, or a cup of Slow Cooker Cabbage Roll soup.

Storing Leftover Roast Beef Sliders

Allow leftovers to fully cool, then wrap in foil or transfer to an airtight container. Store in the refrigerator for up to 3 days. To reheat from the refrigerator, wrap loosely in foil and reheat in the oven at 350 degrees Fahrenheit for 10-15 minutes. Remove the foil for the last 3 minutes to crisp up the tops of the sliders. 

You can also freeze the leftovers for up to 1 month! To reheat from frozen, follow the steps above, but bake for an additional 10 minutes until warmed through.

French Onion Roast Beef Sliders

Have deli roast beef, leftover pot roast, or leftover roast beef? These beef sliders are perfectly cheesy, warm and comforting.

Ingredients
 

  • 12 Hawaiian rolls, 1 package
  • 1 lb deli roast beef, sliced
  • 10-12 slices swiss cheese, divided
  • 1 cup French fried onions

For the sauce:

  • 4 tablespoons butter, salted
  • 1 tablespoon au jus gravy mix
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

For garnish:

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit.
  • Spray the bottom of a 9×13” pan baking dish with cooking spray or line the dish with parchment paper or aluminum foil for easy cleanup.
  • Remove your Hawaiian rolls from the package, keeping the rolls together.
  • Use a serrated knife to slice the whole block of rolls in half horizontally and separate the top buns, set aside.
  • Place the bottom layer of the rolls into your prepared pan.
  • Lay down your first half of cheese slices across the bottom layer, covering the surface.
  • Next, pile on the deli-sliced roast beef evenly over the cheese layer.
  • Sprinkle the French-fried onions evenly all over the beef.
  • Lay down the remaining slices of cheese evenly across the top of the onion layer, covering the whole surface.
  • Add the top layer of the rolls.
  • In a small bowl or or heat-safe dish, melt the butter in the microwave.
  • Remove one tablespoon of powder from the au jus gravy mix packet.
  • To the bowl with the melted butter, add the gravy mix, Worcestershire sauce, mustard, garlic powder, and onion powder to the melted butter and stir until combined.
  • Brush the melted butter mixture all over the top of the rolls.
  • If using sesame seeds or Everything Bagel seasoning, sprinkle across the top of the rolls.
  • Place the pan of sliders into the oven uncovered. Bake for 15-20 minutes until golden brown on top.
  • Once the sliders come out of the oven, garnish with fresh parsley or thyme if desired.
  • Serve with au jus on the side for dipping if desired (see notes below).

Notes

Meanwhile, prepare the au jus mix if you would like to use it for dipping the sandwiches. Simply prepare the mix according to the directions of the packet. It won’t make a huge difference that 1 tablespoon was removed from the packet, it will still come out just as flavorful to dip the sliders into.
