This will be your new favorite baked potato recipe! Made in the air fryer with crispy skin and fluffy insides.

I make baked potatoes in the oven when the oven is already on. But baking them in the oven seems a little silly if you’re just making potatoes! When I need baked potatoes but don’t want to fire up the oven, an air fryer baked potato is my go-to.

This air fryer baked potato recipe can double as a side dish, or the main dish! Top with basic toppings like butter or sour cream, or stuff with cheese and steamed broccoli to make it a meal!

Recipe Tips and Tricks

This is a super simple recipe, but I do have a few tips and tricks for you:

  • Substitutions: The technique below will also work for sweet potatoes. Or smaller red potatoes or Yukon golds, but I’d recommend adjusting the cook time down to 30-40 minutes. 
  • Preheating: Also, preheating the air fryer helps ensure even cooking, but it’s not critical! If you don’t have time, just throw them in.
  • Twice Baked: You can absolutely use this method to make twice baked potatoes! Allow the potatoes to cool, then scoop the inside of the potato out into a bowl. Add butter and sour cream and mash. Re-stuff the potato skins and top with cheese, then return to the air fryer. Air fry for 5-10 minutes, or until the cheese is melted.

Serving Suggestions for Air Fryer Baked Potatoes

I typically serve air fryer baked potatoes as a side dish. Top with your favorite toppings! A dollop of sour cream, chives, garlic powder, sea salt and fresh cracked black pepper are my favorites. Storing Leftovers 

I recommend storing leftover potatoes in an airtight container in the refrigerator. Reheat in the microwave or air fryer! Simply place them in the air fryer basket and cook at 350 degrees Fahrenheit for about 5-7 minutes until heated through.

Crispy Air Fryer Baked Potatoes

Making baked potatoes in the air fryer is super easy to do, and yields crispy skin ever time.

Ingredients
 

  • 3 russet potatoes, large
  • 1 tablespoon olive oil
  • 1 tablespoon kosher salt

Optional toppings:

  • salt, black pepper, butter, chives cheddar cheese

Instructions
 

  • Scrub the potatoes clean under running water and pat them dry with a paper towel.
  • Pierce each potato several times with a fork to allow steam to escape during cooking.
  • Brush olive oil on all sides of the potatoes. You can also use cooking spray. Then, sprinkle with salt.
  • Preheat your air fryer to 390 degrees Fahrenheit for 5 minutes.
  • Place the potatoes in the air fryer basket, making sure they are not touching each other.
  • Air fry for 60 minutes, flipping the potatoes halfway through the cooking time.
  • Once the potatoes are tender and easily pierced with a fork, remove them from the air fryer. I recommend you use tongs to keep your hands safe, the potatoes will be hot!
  • Let the potatoes cool for a few minutes before slicing them open with a knife.

Notes

To check doneness, the potatoes should be easily pierced with a fork with no resistance. You can also squeeze the sides of the potato to see if they give under pressure.
