This Meatloaf Sandwich with Tomato Bacon Jam is the perfect way to use leftover meatloaf! I combined a pan-seared slice of turkey meatloaf with arugula, melted swiss cheese and tomato bacon jam for the perfect, hearty sandwich.

Happy New Year, everyone! I was recently that I was only allowed to wish everyone a happy new year until mid-January, so I guess I’m cutting it pretty close.

At any rate, I am SO glad for the fresh start that 2019 brings. 2018 was a really tough year for me, balance wise. My “day job” became more and more demanding as the year went on, and I regret to say that both my family life and my blog life took a hit.  And so did my health and sleep.

Luckily, I was able to take a few weeks off to rest around the holidays and am feeling great. One of the words that I’m focusing on for 2019 is “Joy,” and I really hope that you see that through my work on the blog this year!

We’re kicking off 2019 here at Blackberry Babe with a delicious twist on traditional meatloaf, a Meatloaf Sandwich with Tomato Bacon Jam! This is a recipe that definitely brought JOY to my household last week.

The tomato bacon jam has a bit of a sweet and salty twist to it! If you want the pure and lovely flavor of tomatoes, I recommend topping this sandwich with Tomato Chutney!

This Meatloaf Sandwich recipe isn’t the first meatloaf recipe that’s shown up on Blackberry Babe. Last year, I published a delicious twist on your traditional ‘loaf, this Barbecue Turkey Meatloaf.

Another priority for me this year is to reduce the amount of  waste we  create in the kitchen! Our biggest challenge is leftovers. We love a lot of variety in our meals! Repurposing meatloaf into a delicious meatloaf sandwich is a great way to get variety AND reduce our food waste, win/win!

For this recipe, I cheated a bit and used Honeysuckle White® prepared meatloaf. I love this tasty meatloaf which comes pre-made and in an easy-to-open package with an aluminum tray, so there is no clean-up! I used a slice of leftover turkey meatloaf, quickly seared it, then topped it with melted Swiss cheese, arugula and tomato bacon jam. I love the extra flavor that searing the meatloaf gives. It is SO delicious!

If you choose to use a turkey meatloaf for this sandwich, I highly encourage you to choose Honeysuckle White turkey. I’ve had the opportunity to visit a few of their family farmers that raise their birds.

I personally love Honeysuckle White for that reason, their brand supports 700 family farms across the United States! Also, they never use growth promoting antibiotics when raising their turkeys, so I feel good about feeding their turkey to my family.

Meatloaf Sandwich with Tomato Bacon Jam

This Meatloaf Sandwich with Tomato Bacon Jam is the most delicious way to use up leftover meatloaf! It's topped with arugula, melted swiss cheese and a delicious bacon jam. 

Ingredients

  • 1 tbsp olive oil
  • 1 high quality hamburger bun
  • 1 ¾-inch thick slice of leftover meatloaf (I used Honeysuckle White HomeStyle Turkey Meatloaf)
  • 2 tbsp Tomato Bacon Jam (see notes below)
  • 1 slice swiss cheese
  • a handful of arugula

Instructions

  • Heat oil in large skillet over medium-high heat. 
  • Add buns face down and allow to lightly toast for about one minute. 
  • Next, add meatloaf slice and sear for about 30 seconds on each side until lightly caramelized. Be careful not to burn.
  • Add meatloaf to toasted bun and top immediately with swiss cheese to allow to melt. Top with arugula and tomato bacon jam, serve warm. 

Notes

You have a few options for the jam. This is my favorite easy recipe online. You can also purchase bacon jam and modify it with a dab of tomato paste or crushed tomatoes.
