This soup brilliantly captures everything wonderful about traditional lasagna while being much simpler to prepare. The slow cooking allows the flavors to meld beautifully, creating a rich, complex broth that tastes like it’s been simmering on a stovetop all day. The addition of cream at the end gives it a luxurious, velvety texture that perfectly complements the al dente noodles and savory meat!
Ingredients Needed
This easy slow cooker lasagna soup uses minimal ingredients to create a delicious and cozy soup! Here’s what you’ll need:
- Ground Beef: Use 85-90% lean ground beef for best flavor without excess grease.
- Chicken Broth: Chicken broth provides a deeper flavor than water!
- Marinara: You can make a homemade marinara sauce or use a jar of your favorite store-bought version.
- Onion & Garlic: Use onion and garlic to add a depth of savory flavor and delicious aroma!
- Italian Seasoning: All you need to season up this soup to perfection is a simple Italian seasoning blend.
- Lasagna Noodles: I just add the noodles right in, but you can break them up into smaller pieces if you desire!
- Heavy Cream: For a creamy, luxurious finish.
- Salt & Pepper: Add to taste.
- Toppings: Top off each bowl with a dollop of ricotta, shredded mozzarella, and fresh parsley!
Substitutions & Additions
Consider these flavorful additions and/or substitutions to customize your lasagna soup:
- You can replace the ground beef with ground Italian sausage, ground chicken or ground turkey if you prefer!
- For a slightly lighter soup, you can replace the heavy cream with half & half.
- If you like a bit of spice, add a dash of red pepper flakes along with the Italian seasoning.
- For an extra boost of nutrients, add in some fresh spinach or kale towards the end of the cooking process.
- If you have fresh herbs like basil, oregano, or thyme on hand, feel free to throw some in.
- For added vegetables that add a slightly sweet flavor profile, add in some diced red bell peppers.
How to Make Easy Crockpot Lasagna Soup
- Brown the Beef: In a large skillet, brown the ground beef.
- Add Aromatics: Add the onion, and cook 1-2 minutes, until soft. Add the garlic and cook for 1 minute.
- Place in Crock Pot: Add the beef mixture to your crock pot.
- Add Liquids & Seasoning: Add in chicken broth, pasta sauce, and Italian seasoning.
- Slow Cook: Cook on low for 3-4 hours. At the 3-hour mark, raise the crockpot to high, and add the lasagna noodles.
- Serve & Enjoy: Continue cooking until the noodles are al dente. Stir in heavy cream, and salt and pepper to taste. Serve with a dollop of ricotta cheese, some shredded mozzarella cheese and freshly chopped parsley and enjoy!
Tips for the Best Lasagna Soup
- Break lasagna noodles into 2-3 inch pieces before adding to prevent clumping and ensure even cooking. I also recommend stirring occasionally, especially near the bottom of the slow cooker, to prevent clumping and sticking!
- Check noodles every 30 minutes after adding until they reach desired tenderness!
- While slow cooking the soup, keep the lid closed as much as possible to maintain consistent temperature.
- Add extra broth if soup becomes too thick during cooking!
- Let the lasagna soup rest 5-10 minutes after adding cream to allow flavors to meld before serving.
Serving Suggestions
Serve this comforting lasagna soup recipe piping hot in deep bowls, topped with generous dollops of creamy ricotta, melted mozzarella, parmesan cheese, and a sprinkle of fresh parsley. The cheese will slowly melt into the soup, creating those signature lasagna cheese pulls with every spoonful.
Crusty Italian bread or garlic bread is essential for soaking up the flavorful broth, and a simple green salad like my citrus and pear spinach salad or house Italian salad adds freshness and balance.
For a heartier meal, serve with some Bisquick cheddar biscuits!
Storage Suggestions
Store any leftover crockpot lasagna soup in an airtight container in the fridge for up to 4 days. The noodles will absorb more liquid during storage, so you can add a splash broth when reheating.
