Slow Cooker Thai Chicken Noodle Soup
Today’s post has a recipe that is super important to my family! We have a few things that we make when we’re sick, and this Thai Chicken Noodle Soup is our favorite!
Personally, I’m so very happy that cold and flu season is almost over. It’s been a rough one for us, and balancing being a parent and employee is pretty tough when your child is sick every few weeks! Having a sick kiddo is sad and stressful, and it can totally disrupt your routine. Heaven forbid that you also get sick, which adds insult to injury!
I’ve learned that having a few things on hand can help ease the burden. First, I make this Slow Cooker Thai Chicken Noodle Soup, which is so easy and comforting.
Sure, it’s a little different than traditional chicken noodle soup, but the flavors are still mellow and it’s so hearty. This thai chicken noodle soup is perfect for a sick kiddo (or parent! ) I also keep lots of saltine crackers on hand during the winter, because it’s a family favorite.
Slow Cooker Thai Chicken Noodle Soup
This Thai chicken noodle soup is packed with Thai flavors. Perfect when a family member is sick!
Ingredients
- 1 teaspoon ginger, ground
- 1 tablespoons soy sauce
- 4 cups chicken broth
- 1 cup matchstick carrots
- 2 tablespoons fresh cilantro, chopped
- 3 tablespoons fresh chives, diced
- 1 tablespoon fresh basil (thai basil preferred)
- juice of one lime
- ⅛ tsp black pepper
- 7 ounces bean thread or super thin rice noodles
Instructions
- Add chicken breast, soy sauce and chicken broth into crock pot. Cook covered on high for 3-4 hours, or on low for 5-6.
- Remove chicken breast from crock pot, shred. Return to crock along with chicken broth, matchstick carrots, cilantro, chives, lime juice and black pepper and dried ginger. Cover and allow to cook on low for 10 minutes.
- Add noodles and stir to thoroughly cover in liquid. Simmer for 5-10 minutes until noodles are softened.
