I first laid my mouth on these incredible appetizers my sophomore year in college. I was lucky enough to have a roommate whose mother owned a catering business. Each time she visited, she would cook us a variety of homemade goodies!
We always requested her appetizers, and our favorite, hands down, were these Bacon Wrapped Water Chestnuts. After I graduated, I searched high and low for a recipe that was similar to hers.
Luckily, I found the recipe, and have been making it almost monthly since I graduated college 14 years ago! I think every home cook needs a fail safe appetizer in their repertoire. This appetizer recipe is my all-time favorite. These Bacon Wrapped Water Chestnuts are lick-the-plate good. I am in no way exaggerating, I have literally licked the sauce off the plate when cleaning up after a party. Yes, I was wine drunk. Don’t judge me.
I've customized this Bacon Wrapped Water Chestnuts recipe just a bit, and have learned some tips and tricks to making sure they are perfect!
These tips are below, but there is one that I want to emphasize for you. Do not cook the Bacon Wrapped Water Chestnuts directly on your baking tray. Why not? Because it as the bacon cooks, it will release grease. And then, your bacon wrapped goodies will be cooking directly in a puddle of grease. They will start to smoke, and your fire alarm will go off. Seriously! It's a mess, don't say I didn't warn you. 🙂
To avoid this mess, you can do two things.
1) Cover your baking tray with aluminum foil. This will help greatly with your clean up effort!
2) On top of your baking tray (and over the foil, if you use it), place a cookie cooling rack. This one is sized to fit in a quarter-sized baking tray. Using this will lift your bacon wrapped chestnuts out of the grease, give you crispier bacon, and save you a TON of grief!
