Lay the round of thawed, prepared pie crust (or puff pastry) on a greased baking tray.
Use a pairing knife to carefully cut out the Jack O'Lantern face, peeling away the cut dough from the shapes.
Place the brie round over the top of the cut-out face, then top the brie round with 1-2 tablespoons or honey or jam.
Fold the extra dough on the sides and bottom of the round up and over the back of the brie to seal in the honey or jam, then flip over.
Use the extra dough on the top to twist into a pumpkin stem shape. At this time, you can use your pairing knife to carve extra lines in the stem or pumpkin body, if desired.
Bake for 15-20 minutes, until the dough is starting to turn golden brown, and the brie is soft.
