Place raw chicken breasts on an even surface. Cover with plastic wrap and pound with a meat mallet until flattened out to ¼ inch thickness.
Place one slice of ham and one slice of cheese in a single layer on top of chicken breast and gently roll up, securing with toothpicks.
Place Louisiana Fish Fry Chicken Coating on a plate or in a shallow bowl. Roll chicken in coating to coat, patting coating on any uncovered areas.
Place the coated chicken rolls in the preheated air fryer basket
Air fry at 390 degrees for 30 minutes, flipping chicken every ten minutes. Towards the end of the cooking time, spray the surface of the chicken with cooking spray.
Remove chicken from the air fryer when the crust is golden brown and the chicken has reached an internal temperature of 165 degrees Fahrenheit using an instant read thermometer. and the crust is golden brown.
In a small saucepan, combine sour cream, cream of chicken soup, lemon juice and mustard. Bring to a gentle simmer and stir frequently for 2-3 minutes, until well combined.
Spoon cream sauce over the top of the chicken. Serve warm.

If you want to make your own bread crumb mixture for the coating, combine:
1/2 cup panko breadcrumbs
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
If you are having a hard time getting the child to stay in its rolled shape, it's totally fine to use toothpicks! Just remember to remove them before eating.
