The Best Mexican Chicken Marinade
This citrusy asado-style recipe uses simple marinade ingredients! This marinade recipe adds beautiful flavor and color to your chicken breasts. Use it for chicken fajitas, tacos or simple grilled chicken. This recipe makes enough marinade for 2 pounds of chicken
Ingredients
- 1/3 cup orange juice
- 3 tablespoons fresh lime juice
- ⅛ cup cilantro, fresh, chopped
- 1 tablespoon smoked paprika
- 1 tablespoon oregano
- 1 tablespoon salt, kosher
- 1 tablespoon garlic powder, or 1-2 garlic cloves, minced
- 1 tablespoon olive oil, or avocado oil
- 2 teaspoons chili powder
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- ¼ teaspoon ground cloves
Instructions
- To a small bowl, add marinade ingredients and whisk vigorously to combine.
- To a gallon-sized resealable plastic bag, add up to two pounds of raw chicken, diced or whole pieces.
- Pour marinade into the bag. Carefully press out any air as you seal the bag.
- Marinade for a minimum of 4 hours, up to 24 hours.
- Remove chicken from marinade and cook until it reaches an internal temperature of 165 degrees Fahrenheit using an instant read meat thermometer.
