Crispy Oven Baked Asian Wings with Peanut Sauce

Ingredients
For the wings

baking powder

For the sauce

soy sauce
▢

tablespoons
sesame oil
▢

sriracha
▢

tablespoon
peanut butter

tablespoon
mayonnaise
▢

tablespoon
lime juice
▢

teaspoon
sugar
▢

teaspoon
garlic powder
Instructions
Preheat oven to 250F and place oven racks in upper/middle and lower/middle positions.
Pat the chicken wings dry with a paper towel.
Line a baking tray with foil, then place a rack (like a cooling rack) on the foil. Spray the rack with cooking spray.
Place wings in a ziploc bag. Add the baking powder and salt, then toss to coat evenly.
Place the wings on the baking tray/rack. It's okay if they overlap a bit.
Place wings on the lower middle oven rack and bake for 30 minutes.
Move wings up to the upper middle rack and increase the oven temperature to 425F. Bake for another 45 minutes.
Remove baking tray from the oven and let it rest for 5 minutes before removing chicken.
In a small bowl, mix sauce ingredients.
Toss baked wings in sauce, serve.
