Preheat oven to 300 degrees Fahrenheit. Prepare a 9x9'' baking dish by spraying it with cooking spray.
In a large microwave safe bowl, add the cream cheese and green chiles. Cook in microwave for 1-2 minutes, until cream cheese is melted. Stir and smooth the softened cream cheese with a spatula.
To the cream cheese, add corn, ¾ cup of the cheese, diced onion, and spices. Gently fold the mixture to combine.
Spray a 9x9'' baking dish with cooking oil, then add corn and cream cheese mixture to pan. Sprinkle with the remaining ½ cup to cheese.
Bake in preheated oven for one hour, or until the cheese is completely melted and starting to brown on top. If the cheese is not browning, turn your oven to low broil for 1-2 minutes to speed the process!
