Place the tortilla chips in a single layer on the baking sheet and sprinkle shredded cheese on top.

Place pork onto the chips. Sprinkle the chips with a second layer of cheese. Bake for 6-9 minutes.

Transfer to a roasting pan. Bake for 1 hour 20 minutes. Leave in the oven for an additional 40 minutes.

Drizzle on the crema mexicana and BBQ sauce. Add the tomato, onion, cilantro and lime juice.
