Sour Cream Chicken Enchiladas with  Green Sauce

Need an easy sour cream enchilada recipe? These delicious sour cream enchiladas are stuffed with tender chicken, melty cheese and green salsa, then topped with an amazing sour cream sauce!

INGREDIENTS

– 3 to 4 cups rotisserie    chicken – 8 8-inch tortillas – 3 ounces salsa verde – 1.5 cups monterey jack    cheese For the sour cream sauce: – ¼ cup butter – ¼ cup flour – 16 ounces chicken broth – ¼ teaspoon garlic powder

1. ADD INGREDIENTS

Preheat the oven to 400F. Divide the chicken between the tortillas, spoon 1.5 tbsp cheese & 1 tbsp salsa verde on top of chicken. Roll enchiladas. Take the filled tortillas and place seam-side down.

2. PREP SAUCE

In a saucepan, melt butter over low heat. Add flour, to make a paste. Add chicken broth & spices, then increase the heat & bring to a boil. 

3. BAKE ENCHILADAS

Remove from heat. Add sour cream & green chiles. Pour sauce over the enchiladas, then sprinkle with the remaining cheese. Bake for about 20 minutes

4. SERVE

Drizzle with salsa verde. Sprinkle fresh cilantro and salsa verde. Serve warm.
