INGREDIENTS

– 2.5 tablespoons jerk seasoning – 1 pound shrimp, peeled, deveined – 1 pound penne pasta – 3 tablespoons butter, divided For the sauce: – 1 red bell pepper – 1 orange bell pepper – ½ yellow onion, diced – 5 green onions

Prepare pasta to package instructions, cooking to al dente. Reserve 1 cup of pasta water.

PREP PASTA

In a mixing bowl, toss shrimp and jerk seasoning to coat. To a skillet, add butter and add the shrimp and sauté for 2-3 mins. 

SAUTE SHRIMP

To the same skillet, add 2 tbsp of butter. Add bell pepper & onions. Sauté. Add minced garlic and sauté. Add flour and stir.

PREP SAUCE

Add milk, cream cheese, & 1 tbsp of jerk seasoning. Let simmer. Add shrimp, cooked pasta, parmesan cheese & fresh spinach. Stir well to combine

COOK

Serve warm, garnish with fresh tomatoes and green onions.
