INGREDIENTS

– 4 ears of corn, shucked – 16 pieces of bacon – 2 jalapenos, sliced – fresh cilantro or basil to taste – salt and pepper, to taste

Lay four pieces of bacon out . Use the corn like a rolling pin to flatten out the bacon.

PREP BACON

Lay jalapeno slices on bacon, about a half of a jalapenos worth per ear of corn.

ADD JALAPENOS

Sprinkle salt and pepper, and either cilantro or basil to taste.

SEASON

Roll the bacon around the corn and press the ends to help the bacon stay put.

ROLL BACON

Repeat for the remaining ears of corn.

FINISH ROLLING

Grill over high heat for 10-15 minutes, until bacon is crispy. Rotate every few minutes.
