Gluten Free Cinnamon Rolls with Cream Cheese Frosting

Yes, you can make gooey cinnamon rolls without traditional flour! This simple gluten-free cinnamon roll recipe is both gluten free and yeast free.

INGREDIENTS

For the cinnamon roll dough: – 1 ½ cups gluten free all-    purpose flour  – 2 tbsp sugar – 1 tsp baking powder – ½ tsp baking soda – ¼ tsp salt – 4 tbsp butter, melted – ½ cup plus 2 tbsp milk – 2 tsp apple cider vinegar

1. COMBINE DRY INGREDIENTS

In a large mixing bowl, add the flour, 2 tablespoons of sugar, baking powder, baking soda, and salt. Whisk to combine.

2. COMBINE WET INGREDIENTS

In a small bowl, melt 4 tbsps of butter. In that same bowl, add the milk and apple cider vinegar. Stir to combine.

3. FORM DOUGH

Pour the wet ingredients into the dry ingredients and mix well until a consistent dough forms. Using clean hands, form the dough into a ball.

4. ROLL OUT DOUGH

Place a piece of parchment paper on top of the floured dough and roll it using a rolling pin. You will need a large rectangle or dough measuring approximately 8x14”.

5. ADD CINNAMON LAYER

Pour melted butter onto the dough. Combine the remaining 2 tbsps of sugar, brown sugar and cinnamon in a small bowl. Sprinkle evenly over the surface of the buttered dough.

6. CUT THE ROLLS

Pinch the ends shut and use a knife to slice the log into 6 even pieces.

7. BAKE

Place rolls into the prepared muffin pan and place in the preheated oven to bake for 13-15 minutes, until the tops of the rolls turn a light golden brown.

8. MAKE FROSTING

In a bowl, add cream cheese and softened butter. Whisk. Add vanilla, salt and powdered sugar, whisk again until combined.  Add 1 tbsp of milk at a time until desired frosting consistency is reached.

9. SERVE

Spread the icing evenly over the top of the warm cinnamon rolls and enjoy!
