Cranberry Harvest Salad with Apple Cider Vinaigrette

Looking for the fresh and delicious side dish for your fall table? This is my go-to salad recipe for our any fall dinners!
– 1 batch Apple Cider Vinaigrette
– 5.5 oz spring mix lettuce
– ½ cup of dried cranberries
– ½ cup of feta cheese
– 1 large honey crisp apple
– ½ cup of walnuts
– ½ red onion, sliced
– ½ cup pumpkin seeds
1. COOK SWEET POTATOES
In a small bowl, toss cubed sweet potatoes with 1 teaspoon oil, salt and pepper.
2. AIRFRY POTATOES
Air fry at 400F for 10-12 minutes, or roast on a baking sheet at 425 for 15-20 minutes.
3. ADD INGREDIENTS
To a large bowl, add the spring mix lettuce and top with salad ingredients, including the sweet potatoes.
4. ADD VINAIGRETTE
Pour vinaigrette over top of the prepared salad.
Serve immediately and enjoy!
