These Crispy Corn Cakes are made with simple ingredients and ready in about 15 minutes. Add cheese, bacon and diced jalapeno for extra flavor!

INGREDIENTS

– 2 eggs – 1 tsp baking powder – 1 tsp sugar – 1 tsp salt – ½ tsp pepper – ½ cup all-purpose flour – ½ cup cheddar cheese – 15 ounces corn

1. MIX INGREDIENTS

In a large mixing bowl, mix eggs, salt, pepper, sugar and baking powder. Once combined, add flour and whisk into wet mixture until incorporated.

2. ADD CORN & BACON

Add corn, shredded cheese, bacon and jalapeno.

3. PREP TO COOK

In a large skillet, heat olive oil on medium-high heat. Once the oil starts to sizzle, add scoops of the corn mixture using ice cream scoop or large spoon.

4. COOK

Cook for 2-3 minutes until  browned. Once cooked,  remove the cakes on a paper towel lined plate to drain before serving.

5. SERVE

Garnish with ranch, sour cream, chives and enjoy!
