Growing up, my maternal grandmother made a classic cucumber salad often. It was a fresh combination of cucumbers, red onion or white onions, a bit of apple cider vinegar or white vinegar, white sugar and fresh tomatoes from the garden.

Her cucumber salad was the only way that I would eat cucumbers as a kid. I loved the tangy sweetness of the sweet vinegar dressing!

This Creamy Cucumber Salad builds on the perfect side dish my Grandma made, but adds a cool creamy sour cream dressing to the mix. The creamy sauce is still tangy and a bit sweet, but it is NOT heavy like a mayo-based dressing.

This easy summer salad is healthy eating at it’s best. I just love to throw some meat on the grill and serve a refreshing veggie salad like this on the side. It’s crisp and refreshing, perfect for a hot summer day.

What kind of cucumber should you use for this recipe? Well, that is up to you! You can use regular cucumbers, or English cucumbers. If you have a bumper crop of cucumbers in your home garden, this easy cucumber salad recipe is a great way to use them up!

If you have to buy your cucumbers at the grocery store or farmers market, that’s fine too. Just look for small cucumbers with thin skin to make sure they are nice, fresh and crisp.

This delicious cucumber salad is best when you use crisp cucumbers, and slice them into uniform slices. To make it easy, you can use a mandolin slicer.

I do want to include a few substitutions so this German cucumber salad  is easier for you to make at home without an extra trip to your local grocery store!

  • If you do not have vinegar, use lemon juice.
  • The sour cream dressing can also be modified by using plain Greek yogurt.
  • Add fresh dill weed for some extra herbaceous flavor. It’s the perfect addition.
  • Feel free to substitute fresh basil or other fresh herbs you may have from your garden.
  • Use sweet onion, yellow onions or purple onions.

Easy Creamy Cucumber Salad with Sour Cream Dressing

Ingredients

  • 2 medium cucumbers, sliced thin
  • 1 small red onion, thinly sliced
  • 1 green bell pepper, cut into thin slices
  • 1 cup cherry tomatoes, halved or quartered

For the creamy dressing:

  • ⅓ cup sour cream
  • 2 tablespoons white wine vinegar
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried dill weed
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon salt
  • 1 large pinch granulated sugar

Instructions

  1. First, pat the sliced cucumbers dry with a paper towel to remove any excess water.
  2. To a large bowl, add the sliced cucumbers, red onion, bell pepper, and cherry tomatoes in a large bowl. Set aside.
  3. In a small bowl, add the sour cream, white wine vinegar, black pepper, dill weed, basil, garlic powder, oregano, sea salt, and sugar. Whisk until well-combined.
  4. Pour the sour cream mixture over the vegetables and toss to coat.
  5. Cover and chill for 1 hour. Stir well before serving.
