Baked Strawberry Donuts (Easy Recipe with Cake Mix!)

I am a donut fanatic! Delicious donuts like these Baked Strawberry Donuts have always been a weak spot for me.
This started early in life! My Dad, who was a very hardworking and busy guy, would take me to Dunkin Donuts as a treat a few times a year. Just me, him and Dunkin’s amazing donuts! I always picked a strawberry doughnut, because they are my favorite.

I’ve carried on the donut love with my son. Before he started Kindergarten, we’d have weekly donut dates before I dropped him off at preschool. And who am I kidding, we BOTH loved it!
And although we can’t go sit down and have our donut dates now, that doesn’t stop me from making baked strawberry doughnuts at home!

The strawberry cake donuts themselves, only have five ingredients. I included chopped fresh strawberries, which makes the flavor super FRESH!

Baking donuts is an easy way to reduce their fat content, since they are typically fried. But don’t be mistaken, no donut qualifies as health food!

The icing for these Baked Strawberry Donuts only has three ingredients. Super tasty and super easy!
But, I have a few alternative options for you below.

Serving Suggestions
Of course, these donuts are great for breakfast! But, they’re also a wonderful dessert that’s beautiful for Mother’s Day brunch, bridal showers or baby showers.
Have extra strawberries to use? I love all things strawberry, like this Strawberry Lemonade Pie, Strawberry Cobbler, Strawberry Bread and Strawberry Jam!

Recipe Adjustments
If you don’t feel like making icing, just sprinkle the donuts with a bit of powdered sugar or cinnamon sugar.
If you’d rather drizzle the baked doughnuts with a fresh strawberry glaze, just combine equal parts strawberry puree and powdered sugar and whisk until combined.
I used whole milk, but it’s fine to use what you have. You can also use sour cream.
You can also add chocolate to the mix by making a chocolate glaze! Combine equal parts chocolate syrup and powdered sugar. Or, add a handful of chocolate chips to the batter and stir in gently before baking.
And, don’t forget the sprinkles!

PS- It can be a little messy to get the donut batter into the donut pan. You can pipe it using these piping bags to make it super easy!
Storing Leftover Donuts
Keep any leftover donuts in an airtight container on the counter for up to 3 days. To perk them up once they get stale, you can pat them with a bit of water and gently reheat them for a few seconds in the microwave.
If you’d like to prep these the night before, just make the batter and store it in the refrigerator overnight! Bring it out on the counter 30 minutes before baking to help take the chill off.
These also freeze well, but don’t apply the glaze if you’re planning to freeze them!

Baked Strawberry Donuts
Ingredients
For the batter:
- 15.25 ounces strawberry cake mix, I use Pillsbury
- 1 cup milk
- 1 egg, large
- ¼ cup oil
- 1 cup fresh strawberries, chopped
For the glaze:
- 2 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Optional topping:
- pink/red sprinkles
Equipment
- Non-Stick 6-Cavity Donut Baking Pans
Instructions
- Prepare your donut pan with cooking spray.
- Preheat the oven to 350 degrees Fahrenheit.
- In a large mixing bowl, combine the cake mix, egg, oil and water.
- Then, gently fold in chopped strawberries until well combined.
- Spoon batter into donut pan (approximately ⅓ full in each cavity). Do not overfill the donut cavities. You can also use a piping bag to fill the cavities with less mess!
- Bake donuts for approximately 13-14 minutes. Remove and allow to cool on a cooling rack for at least 10 minutes before applying glaze.
- To create the glaze:In a small bowl, whisk together the powdered sugar, vanilla and milk until you have a creamy texture.
- Dip the donuts into the glaze and top with sprinkles.

Could you use this batter in like a mini muffin loaf pan set? Have you tried it in any other capacity besides a doughnut pan?

Hi Alicia! I do think this would work in a mini muffin loaf as a cake bread, and I’d guess your bake time would be in the 20-25 minute range. I have successfully used this batter in a mini muffin pan with a bake time of around 9 minutes.
