Sausage Stuffed Mushrooms

It’s almost time for the big game! In years past, all I cared about was the food! But this year, there’s a chance that my beloved Chiefs will be in the mix again. So this year, I will care about the game AND the delicious game day food like these Sausage Stuffed Mushrooms!
These Sausage Stuffed Mushrooms are a super versatile recipe! They are a classic appetizer and make the perfect bite-sized snack when you need something easy to make for a party.
Recipe Substitutions:
I have made many substitutions over the years, and they’re always delicious, Here are some substitution suggestions:
- Instead of Italian Sausage, substitute any seasoned ground sausage or pork sausage
- Instead of baby portabello mushrooms, use any whole mushrooms like traditional white button mushrooms or cremini mushrooms
- Instead of panko breadcrumbs, use traditional Italian style breadcrumbs
- Instead of cream cheese, use Boursin cheese
- Instead of Parmesan cheese, experiment with other types of cheese like cheddar cheese or pepper jack
- Instead of the garlic powder, add 1 garlic clove (diced)

Recipe Additions:
- add a little bit of diced green onion or bell peppers to the stuffing mixture before baking
- add a pinch of red pepper flakes to the stuffing mixture before baking
- sauté 1/4 of a white onion (diced) in a bit of olive oil for 2-3 minutes, then combine with the cream cheese mixture
Anytime you make stuffed mushrooms, you have the option to use the mushroom stalks that you remove. Just dice them up and add them to the sausage and cream cheese mixture.
Serving Suggestions:
I recommend serving these stuffed mushrooms warm or at room temperature.

Storage:
This mushroom recipe stores well. You can store unbaked, stuffed mushrooms in the refrigerator for 2-3 days, and bake right before serving.
Leftover baked mushrooms will stay good in an air-tight container in the refrigerator for 1-2 days. Reheat in the oven for the best results.
Alternative Cooking Instructions (Air Fryer/Grill):
Traditionally, these Sausage Stuffed Mushrooms are baked in the oven. But they can also be cooked in the air fryer or on the grill!
- For Air Fryer Stuffed Mushrooms, air fry at 375 degrees for 12-15 minutes.
- For Grilled Stuffed Mushrooms, place stuffed mushrooms in an aluminum pan. Grill over indirect heat for 20 minutes.
Ingredients
- 16 ounces baby bella mushrooms whole, stems removed
Filling Ingredients:
- 8 ounces Italian sausage
- 4 ounces cream cheese softened
- 3 tablespoons grated Parmesan cheese or pecorino romano cheese
- 3 tablespoon panko bread crumbs
- 1 teaspoon garlic powder
- ½ tablespoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ tablespoon parsley
Optional garnish
- diced green onions
- fresh herbs
Instructions
- Preheat oven 375° Fahrenheit.
- Wash and dry mushrooms, remove stems.
- Brown sausage for 4-5 minutes until crumbled and cooked through. Remove from skillet and allow to drain on paper towel lined plate.
- Add cream cheese and parmesan cheese to skillet. Cook on low heat, stirring frequently, for 2-3 minutes or until the cheese is melted.
- Add drained sausage crumbles, breadcrumbs and spices to cheese mixture. Stir well to combine.
- Place de-stemmed mushroom caps on greased baking sheet upside down. Spoon sausage and cheese mixture into mushroom cavities.
- Bake for 15 to 20 minutes, or until the filling is nicely browned and the mushrooms are tender.
- Serve warm.
