This Apple Brioche French Toast uses my favorite bread; brioche! But, you don’t have to use brioche. You can use french bread, challah, or sourdough. This overnight french toast casserole recipe is GREAT for using up slightly stale bread, so use whatever bread you have!

The bread that you use in this recipe is versatile, and so is the fruit! I love using apples because I almost always have them on hand, but you can use this recipe as the base and substitute many other kinds of fruit. Blueberries, raspberries, blackberries, pears and even bananas are all fair game as substitutes!

If you’re able to, prep this Apple Brioche French Toast Casserole the night before and pop it in the fridge. Having it sit overnight is ideal, as it gives the bread time to soak up all the flavors! If you can’t let it sit overnight, allow it to sit at least one hour before baking!

I love serving this overnight french toast casserole to guests. They love it! Pair with a simple egg casserole like this Tator Tot Breakfast Casserole or Breakfast Casserole with Bacon! You could also make these easy little Mini Egg Muffins with Bacon and Cheddar or a simple pan of scrambled eggs.

Ingredients

  • ½ loaf brioche bread cubed
  • 5 eggs
  • ¾ cups milk
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1.5 teaspoon vanilla extract
  • ½ teaspoon salt
  • 3 large apples cored and diced

Instructions

  • Prepare a 9×13 casserole dish with nonstick cooking spray.
  • Place the cubed bread and diced apples in the casserole dish. Gently stir to combine.
  • In a large mixing bowl, whisk together eggs, milk, sugars, cinnamon vanilla and salt. Pour evenly over the bread and apple mixture.
  • Cover refrigerate to allow the bread to soak for at least an hour or up to overnight.
  • Preheat the oven to 350 degrees.
  • Uncover and bake for 60 minutes or until the eggs are completely set (no jiggling!)
  • Serve warm, drizzled with maple syrup or honey.
