Pineapple Moscow Mules are a tropical Moscow Mule that’s perfect for summer! Super fresh and crisp, a perfect summer cocktail! 

Have you heard that tiki bars are back in style? At least they are here in Kansas City, and they’re responsible for me tasting my first Pineapple Moscow Mules! We’ve recently seen several pop up, and I have to say that they’re a refreshing change! Who doesn’t want to feel like they’re transported to a different place altogether. Drinking cocktails like this Jungle Bird Cocktail or Pineapple Martini make you feel like you’re on vacation!

What I love about tiki bars is that for a bit, you can feel like you’re somewhere else altogether! The music, decor and drinks help you forget a bit about day-to-day life and kick back! And it’s typical for the bartenders to have fun. They use festive glassware and creative garnishes to make each drink unique. The resurgence of these tiki bars in Kansas City has definitely influenced what I make at home for myself! I find myself using more tropical juices and creating twists on my standard favorites, like the Moscow Mule. This Pineapple Moscow Mule is my tiki twist on my all-time favorite cocktail!

My love of Moscow Mules is very well documented! These Pineapple Moscow Mules will be the FIFTH mule recipe I’ve shared on this site. My love affair started a few years back, when my sister-in-law gifted me with a set of copper mugs for Christmas. I’ve since experimented with so many variations, from this super popular Cranberry Moscow Mule recipe, to my most recently shared Lemon Lime Moscow Mules!

The beautiful thing here is that the main flavor in Moscow Mules, which is ginger, pairs with almost every fruit flavor perfectly. So, mules are easy to customize for the season or the fruit juices you have on hand! These Pineapple Moscow Mules are so refreshing and perfect for summer.

One thing that you may consider a surprising addition is that of 7UP®. Last year, when I experimented with this Pineapple Mimosa recipe, I found that pineapple juice is just too tart to carry the drink on it’s own.

I added a splash of lemon-lime soda to this mimosa, and it helped cut through the tartness of the juice and made it crisp and refreshing. I took the same approach for this Pineapple Moscow Mule. 

Oh, and since we’re inspired by tiki here, the garnish is important right! I used these fabulous pineapple cocktail picks, two pineapple leaves and a chunk of pineapple to top it all off.

Pineapple Moscow Mules

This Pineapple Moscow Mule is my tiki twist on my all-time favorite cocktail!

Ingredients

  • 1.5 ounces vodka
  • 1.5 ounces ginger beer
  • 1.5 ounces 7UP (Diet or Regular)
  • 3 ounces pineapple juice

Instructions

  1. Combine all ingredients in copper mug and fill mug with ice. Stir well and serve while cold.
